WHAT IS MATCHA ?
Matcha is a finely ground green tea made from specially grown and processed tea leaves.
The powder is prepared by whipping it with hot water using a traditional chasen (bamboo whisk).
The whole tea leaf is consumed, making the quality of the leaves especially important.
Matcha is praised for its many health benefits, including high antioxidant content, metabolism-boosting properties and ability to improve focus and calmness.

WHAT MAKES MATCHA DIFFERENT FROM GREEN TEA
Matcha and green tea are both derived from the Camellia sinensis plant, but undergo different cultivation, processing and preparation methods.
Matcha requires a long shade period before harvest to enhance the chlorophyll and amino acids, resulting in its vibrant green hue and rich flavour.
After harvesting, the leaves are steamed, dried, de-skinned and ground into a fine powder using traditional stone mills.
Unlike other Japanese teas, Matcha consumes the whole leaf, so higher concentrations of antioxidants, vitamins, minerals and other nutrients are not lost through brewing, but are consumed directly.
Matcha is also known for its energy-giving properties thanks to its caffeine and L-theanine content.
QUALITY?
COLOUR: High-quality matcha a vibrant green colour, which is the result of an effective shading process before harvesting.
TEXTURE: The texture should be finely ground and smooth, silky and powdery.
AROMA: Top-quality matcha has a sweet fragrance with a fresh, grassy scent.
TASTING: When tasted, high-quality matcha offers a balanced umami flavour, often described as creamy and vegetal, with minimal bitterness.
PACKAGING: High-quality matcha is usually stored in airtight containers or packs in relatively small quantities to maintain freshness and protect it from exposure to light and air, so that its flavour and nutritional value remain optimal. Advice, store Matcha in the fridge after opening.
